Benzoic acid and sorbic acid, used in the form of sodium, potassium or calcium salts, are one of the well-soluble and widely used food preservatives. Many preservatives are used in foods. The presence of food additives is a matter of debate for consumers in terms of health hazards. The reason for the use of preservatives in foods can be listed as protecting foods against microorganisms, environmental conditions and extending shelf life.

Benzoic acid and Sorbic acid, It provides protection in foods by delaying the growth of yeast, mold and bacteria. Benzoic acid and Sorbic acid are used in ketchup, carbonated and still beverages, and beverage concentrates. Benzoic acid, which is mostly used in the form of sodium salt, is antimicrobial. The most common reason for use is the low solubility of benzoic acid in water.

Sorbic acid, on the other hand, has a broad spectrum activity against yeast and molds, although its antimicrobial effect is limited against bacteria. Determination of Benzoic Acid and Sorbic Acid is one of the tests performed to determine whether preservatives are used in accordance with the Food Regulation.
