Determination of Trans Fatty Acid Isomers



Trans fats or trans-fatty acids (TFA) are unsaturated fatty acids that contain at least one double bond in the trans configuration. When consumed with food, trans fatty acids affect total and LDL cholesterol concentrations and pose a risk of coronary heart disease.

Some food packaging contains the phrase "No Trans Fat". For a “Trans Fat Free” claim to be made, the trans fat content in the food must be less than 0.5 g per serving. Trans fat in foods is formed during hydrogenation to improve the functionality and oxidative stability of fats.

Label control on foods is important. If the label says partially hydrogenated oil, it means the product contains trans fat. Determination of Trans Fatty Acid Isomers is carried out in order to prove the claim that "Does not contain Trans Fat" in foods.
