Determination of Monosodium Glutamate (MSG)



Monosodium Glutamate; chemically known as 2-amino pentane dioic or 2-amino glutaric acid. Monosodium Glutamate (MSG) is a flavor enhancer commonly used in traditional Asian cuisine. Monosodium Glutamate is rapidly absorbed in the gastrointestinal tract. In this case, it can increase the glutamate levels in the blood plasma.

Studies have shown that high consumption of MSG causes damage to areas of the brain that are not protected by the blood-brain barrier, and therefore may cause various chronic disorders.

As stated in the Turkish Food Codex - Food Additives Regulation, the maximum amount of MSG that can be found in food products is 0.10 g/kg. Within the scope of food analysis, the determination of Food Additives used for the purpose of giving color, taste, texture and flavor to foods is carried out. With the said regulation, additives that are kept under control and whose use is free, restricted or prohibited can be determined.
